Bruschetta with Roasted Tomatoes

Ingredients

  • ¼ 1 loaf ciabatta bread cut into ½ inch thick slices
  • 2 pints cherry tomatoes
  • ½ bunch fresh basil, chopped
  • 1 tsp. salt
  • ½ tsp. Pepper

Preparation

  1. 1) Heat grill to high, and preheat oven to 450 degrees.
  2. 2) Lightly brush Ciabatta slices with 1/3 cup olive oil.
  3. 3) Grill bread over high heat until grill marks appear on both sides.
  4. 4) Add cherry tomatoes with the other 1/3 cup olive oil, salt and pepper.
  5. 5) Place on a baking sheet and roast in the oven for 20-25 minutes.
  6. 6) Remove and cool.
  7. 7) Top 1/2 bruschetta with 2 tbsp. tomatoes and top with chopped basil
  8. 8) Top remaining grilled bread with 2 tbs. burrata, 2 anchovy fillets, 1tsp. lemon zest and chopped basil.
